Wow!  What a fun event!  While we’re always challenging ourselves with new styles of cooking, we really went all out this past weekend with a Japanese gala.  It was great to be able to make traditional Japanese fare appeal to Japanese palettes and still have it taste great to many other guests from different parts of the world with different palettes.  Here’s the menu!

Dear Valued Customer,

HAPPY NEW YEAR!!! Well let’s get right to it…we could talk about what we did for the holidays, how we rang in the new year, what kind of resolutions we all made and how many of them have already been broken…but we’ve done all of that already, haven’t we?

I’ve been cooking for you and writing to you about it for the better part of the last 10 years and one thing for sure hasn’t changed. I know that every day, I’m going to wake up and try to prepare the best food I can, try to come up with new menu ideas that are fun and exciting and try to provide a good value and an excellent culinary experience for all of you in the process.

That has been my motivation for the last decade and as we begin a brand new year, I have further strengthened my resolve to continue to serve you to the best of my abilities!

For those of you who have used our services and tried our food year in and year out, you already know our “different” style. The way we like to layer and develop flavors, the way we try to appeal to your more adventurous spirits! Sure we offer all of the mainstays of food service, but in our hearts, we have always tried to raise the bar a bit and challenge ourselves to prepare foods that few others, if any, are offering!

It is with this zeal and passion for food that I welcome in the New Year. Seasons Gourmet Catering Eggnog Recipe

There’s no better time of the year than Christmas than to be sipping on a home-made glass of eggnog.  With just a few ingredients and some whipping, you can create your own holiday treat everyone is sure to love.

 

Ingredients

6 eggs

1 (16 oz.) can sweetened condensed milk

1 teaspoon vanilla extract

1 quart milk

1/3 pint heavy whipping cream

1 pinch ground nutmeg

1 pinch salt

 

Directions

1.  Beat the eggs; mix in the condensed milk, vanilla, milk and salt

2.  Beat the whipping cream until soft peaks form.  Fold it into the egg/milk mixture.

3.  Sprinkle with nutmeg and serve cold.

 

Makes 8-12 servings

Here are some questions to ask your caterer.

• Will they use fresh or frozen food? Here at Seasons Gourmet Catering, we use only fresh food. We offer locally grown produce when possible and make everything from scratch. We NEVER offer ‘heat and serve’ hors d’oeuvres. Nothing comes from a can. Seriously.
• What about service staff? How many servers will you need? The number of servers needed depends on the type of event you’ll be hosting. Is it passed hors d’oeuvres or stationary? Is it a plated meal or a buffet? These details will make a big difference in the number of service personnel you’ll need. Also keep in mind that a good service staff makes your life easy! You can relax and enjoy your event. Our staff will clean up and your home or office will look just like it did before we got there.
• How is the food quantity determined? There are many factors that go into this decision. For instance, we’ll ask you what time of day the event will be held, how much alcohol will be consumed, what is the age group of the guests, will you plan to serve an entrée, or just hor’s d’oeuvres?
• Will you have food available for our vegetarian or special diet guests? Yes, this is something we will address with you before the menu is agreed on.
• What about lighting and heating? We are able to provide for both of these along with any other rental needs you may have including china, linens, tables, etc.
• Can you help with entertainment? How about decorations? We have a full time event planner on staff that can assist you with every aspect of your event. We have many years of experience with other special events providers including entertainment, florists, photographers, videographers and more.

Those of you who know me, know that I’m a big fan of these next few months. Autumn is my favorite time of year for food! However, the next two months of September and October are somewhat odd for us in that while the rest of the country is about to experience the full bounty of the fall harvest as temperatures start to cool off, we here in Arizona will be caught in between the end of summer and the beginning of the fall season, with a still very warm climate for the next several weeks.

What this means from a food standpoint, is that our local growers and suppliers will still be able to provide us with much of the traditional fare that we have become used to over the summer. So items like peaches, plums and grapefruits are still available in great supply and are still very ripe and fresh! However, we will also start to see some of the early harvest that we associate with the fall season like several varieties of winter squash, fresh passion fruit, tangerines and tomatillos will be great in the months ahead.

After this interesting culinary transitional period, we’ll move full speed into the cuisine of late fall and early winter, which is the absolute best time to be a foodie!!!

For now, I hope that you will enjoy our selections for the early fall season. I think you’ll find that there is a little something for all occasions in this collection of menus and I hope that you will enjoy them as much as we enjoy preparing them!

Dear Valued Customer,

 

So just for a change, I thought I’d open up a summer time letter by NOT complaining about the heat. We have all enjoyed a pretty wonderful spring and finally, summer has arrived! We all knew it was coming…it shouldn’t have come as a surprise, right? What is surprising is that instead of my usual rant about “…it’s so hot”, and “OMG, I can’t believe how hot it is”, and wah, wah, wah, I thought I’d try something a little different.

 

This year, I will embrace the heat. It’s not going away any time soon, so…it is what it is…as they say! In fact, I hear it might get up to around 120 degrees this weekend and I simply can’t wait. Furthermore, I might actually book myself a trip to the surface of the sun. I hear it’s lovely this time of year and I just loaded up on SPF 1,000,000,000 sun block, so I’m sure I’ll be fine!

 

OK…enough of that! Aside from the heat, what also comes with summer is the wonderful bounty of the season. As you will see from our new seasonal menus, I’ve tried to prepare selections that feature the wonderful fresh foods that can best be enjoyed this time of year. I’ve also made an extra effort to lighten up the menus somewhat in light of the fact that we generally prefer the lighter side of things this time of year. Please don’t be alarmed…there are still a few selections of traditional favorites with my mandatory little twists and turns. But, all told, I’m very excited about these new menus!

Ulysio brings with him classical training and many years of experience in cakes, pastries, chocolates and many other desserts along with strong skills in savory foods.
